On the other hand, pie freezes beautifully. So if you'll have a need for the second pie in the next few months, make the whole recipe, eat from one pue now and freeze the other.

Frozen version can be whole pie or small tarts, baked or unbaked.

As far as halving a recipe goes this would be as easy as pie to do so.😉 I would if it were me making it.

I don't see any reason why you couldn't. You can also freeze an extra pumpkin pie, or just the filling portion, to use at a later date.

I think it would be really easy to halve. That’s what I would do, unless I needed two pumpkin pies.
