I imagine that red grapes would also be good with the ricotta here. Generally, green grapes are not as sweet as red ones, so the flavor may a bit different - you might want to dial back the honey, but of course, it's all to taste - whatever works for you.
I would not hesitate to make this substitution. ;o)
