Make ahead? If so how far in advance can this be made?

Made this recipe for Thanksgiving and it was a huge hit. Made the dressing and the pumpkin seeds (which are addictive) in advance and then made brussel sprouts and assembled it on the day. Really yummy!

I'm with MMH. Brussels sprouts develop an unpleasant cabbage-y smell when stored after cooking for more than 6 - 8 hours, in my experience. I know there are people who think it's okay to roast Brusslies (what we called them when I was a child) a day or two ahead of time, but I am definitely not one of them. ;o)

You could do everything ahead except roast the brussel sprouts. It you roast them ahead of time you will lose the carmelization & crispy edges. They will wilt & be soggy - not at all the roasted Brussels sprouts we dream of. I roast lots of veggies early on thanksgiving morning. I keep them on our screened porch on the sheet pans they roasted on & serve them at room temperature.

I think you could make each of the components 2-3 days ahead, and then toss them all together just before serving.
