What is best way to store this cake? I would think refrigeration would make too hard.

This is actually a traditional cake. Torta di noci appears in Pellegrino Artusi's classic "L'arte di mangiar bene" (1891) as recipe no. 637. That means the recipe is likely a couple of centuries old -- developed long before household refrigerators were commonplace in Italian homes.

Thus this cake does not require refrigeration. While I have not made this particular recipe like many classic Italian cakes it should be fine on your kitchen countertop for a few days although a cooler storage location would be preferable (e.g., root cellar or a modern day garage).

I agree, especially about looking for a cooler place. During those centuries when there was no refrigeration, there also was no central heating in most places. If my house or apartment were very warm, I'd be inclined to wrap the cake tightly and refrigerate it if I expected the cake to last more than a few days. (Cakes don't usually, here in my house.) I don't think refrigerating it will make it hard, especially if you put the cake on a top shelf, near the front of the fridge, where it isn't too cold. ;o)
