To check for baking powder freshness: mix a spoonful into a cup of water. If it fizzes, it's still good. If no bubbles, it's time to get a new container.

Baking powder needs to be fresh.

In a 1997 episode of "Baking With Julia" cookbook author Marion Cunningham tells TV host Julia Child that baking powder should be replaced every four months.

It should have an expiration date on the bottom of the can. If it doesn’t, it’s VERY old. Baking powder is very inexpensive. Buy a new can if you’re in doubt.
