I just watched the video. Do you mean that your pan has a bigger diameter or that it’s deeper? I think your idea is a good one, but you might have to add more water to make sure that the water doesn’t evaporate out. Because it’s steamed, it seems unlikely that you could overcook it, so you could try adding time and checking it in 5-10 minute increments. I’ve never made this or even heard of it before, so thank you! I learned something today.

I have recently made this dhokla cake 4 times. The first time was amazing. I steamed it for like 40 minutes but did not make note of exactly how much time.
It is a large cake, so 20 minutes isn't doing it, eventhough most videos i have found say to steam idra for 20 min.
The other 3 attempts were edible, but ut barely.
I have gone up to an hour. But i am not sure if i am over-steaming or under-steaming

She says to steam for 20 min. But i have a very big pan. I am sure i have tried it for only 20 min, and it was definitely not done.
Do you know if I should try to turn thw heat up very high, and try for 20 min?
