1/4 cup of flour is not 55g Especially when a quarter of a cup of butter is 55g. Which is the correct amount of flour needed?

Hi there! Thanks for catching that; I'll make sure the recipe is updated. I use 125 grams as the metric for 1 cup of flour, so 55 grams would be a generous 1/3 cup or a scant 1/2 cup.
