Fresh or dried shiitake mushrooms

Could I substitute dried shiitake mushrooms for the (I assume) fresh shiitakes which can be difficult to find?

I don't see why you couldn't. As long as the dried shiitakes are well hydrated, it should work.

I do it all the time. They will be a bit chewier, even if fully hydrated, but you'll certainly get the taste. I've been buying large containers of dried shitakes from nuts.com (seems like a lifetime's supply) for the best quality I've found anywhere, having bought them for many years. ;o)
