do you have a feta brine substitute?

Maybe mix in some brine from pickles or capers...

Feta brine picks up quite a bit of the tangy flavor of the feta itself. When I recently tried Violife feta I found it noticeably less sharp than regular dairy feta, so I'd add a splash or more of vinegar - probably red wine or sherry vinegar - to taste, shortly before serving. ;o)
