Options for a different cheese
Are there other cheeses that would work? Sharing with a friend who does not like Feta. Would a cheddar work (her preference)?

But it won’t hold up like feta when warmed in the oven - it will just melt.
Maybe, instead, dice the cheddar, too the soup with it, then melt under a grill or a torch.
