No apologies necessary! It's worth a try. I certainly would - and I'm quite interested in knowing how it turns out. I use Measure-for-Measure (King Arthur Baking blend, which is my go-to) for gluten free baking all the time. I'd use it here, too. Good luck!! ;o)
