I would pipe the pâte à choux in concentric circles like a Paris-Brest.

Regardless of the shape precut the top choux into your intended portions. Leave the choux base whole.

If you don’t when you go to cut it half of the creme pat will squish out and you’ll have sloppy looking servings.
