Does the cheese require reheating as it sits to remain soft or once completed and set out can it be left to enjoy as it comes to room temp?

Personally I would let my guests enjoy the feta as it comes down to room temperature. It's an appetizer portion and will likely be consumed fairly quickly. Returning it to the oven will certainly interrupt the flow: for the diners as well as the cook.

But it's your dinner table, your call. Perhaps you can ask those at the table if they would like it reheated before you whisk it away.
