Has anyone successfully made this gluten free? If so what flour did you use?

Any other tips would be appreciated.

I've used King Arthur Flour Measure for Measure, with great success - using oat milk instead of regular milk, and Miyoko vegan butter, as we needed to be this dairy free, too. It worked well! I must say though that I generally use much less sugar than what is called for (1/3 cup), as we have found that the sweetness in even 1/2 cup of sugar overwhelms the peaches, especially one that's are nice and ripe. ;o)
