With any savory topping, I'd be incllined to leave out the sugar (may a couple of teaspoons) and the cinnamon and cardamom. I might leave those spices in if serving a curry-ish stew over them - though without knowing how strong the stout flavor is, I'd probably wait to experiment with doing a curry until I knew.
Consider using the waffle as replacement for the usual baguette in a tartine: arugula lightly tossed in a bright vinaigrette, topped with torn prosciutto or bacon (or with the stout, a nice brat sliced in half lengthwise and fried until a bit crispy, then cut into bite-sized pieces) topped with red onion pickles (see this: https://food52.com/recipes/29712-low-maintenance-fish-tacos) topped with runny yolk eggs. This time of year, I'd serve cucumbers and or beets tossed in vinaigrette alongside, to brighten things up.
Sometimes I add some ripe avocado slices to our tartines, depending on how hungry everyone is. ;o)

Choose based on what you like, ingredients on hand, or what's seasonally available. Possibilities or suggestions: * chile and/or meat roasted to pull-apart tenderness at summer barbecues; * ratatouille or other Provençale vegetable stews in late summer; * any rich gooey cheese sauce, like Welsh Rabbit or Swiss fondue; * chicken and gravy (the Southern dish, with the waffles replacing the usual biscuits).
