Anyone try making this without beans? My husband is a bean hater, so would love some input on amounts to tweak to keep it from getting too soupy.

The beans are canned so I doubt that they would soak up much liquid anyhow; they're already saturated even if they are drained.

You should probably cut back the stock and/or beer initially. You can always add more later to your desired consistency.

And/or add two cups of a root vegetable or more meat to make up the lost volume of the beans.
