How do I roast the squash ? This recipe starts with roasted squash. Are you saying to put it in the oven with olive oil and salt? Wouldn't that change

Or. If you want a shortcut, used canned puréed pumpkin (plain, not pumpkin pie filling).
Since canned “pumpkin” is actually made from a variety of winter squash.

The vegetable used in canned pumpkin may be Dickinson pumpkin (related to butternut squash) or winter squash or a mixture of the two.
In any case, it will work well in this recipe.

You can roast up the squash without adding oil or salt, if you prefer. Split your squash and put it in the pan cut side down, with a bit of water. Roast it until it's soft and tender, and then proceed with the recipe. If you wanted, you could also use a cup of canned pumpkin puree, or any other yellow squash you like instead of the Hubbard. Heck, you can even microwave the squash until it's tender, if that's easier for you.
