Can you use gluten free flour?

My sister uses GF flour to make manicotti, these seem to be very similar. I say go for it!

I think this meat sauce and the cheese will work fine with gf crepes.
Just to get the best results, I’d look at recipes developed for gf crepes to get the most reliable ratios of flour, eggs and milk.
