Ask all the people who make those funny dishes with leftover thanksgiving turkey! So, obviously yes. But there are a few things to watch out for in using cooked meat as an ingredient: • for safety, it should come from the freezer or be no older than three days in the fridge • if it was strongly spiced or sauced, be careful about seasoning the new dish. Use a light hand and keep in the same cuisine. If it was just simply roasted or poached, you have a freer hand with seasoning. • be careful not to dry it out jn the second cooking. Add liquid and/or fat, keep covered for most of the time in the oven, and don’t overcook - by temperature or duration.
