Can you eat it cold? I'm sure it will be edible. Whether or not it's tasty is entirely your opinion. No one here can predict what you and your dinner table guests will find tasty. The primary task of a cook is to put food on the table that will please their taste buds and those of the other people at the table.
My guess is that the beans can be stored a few days and that product quality will decline before spoilage occurs. I would expect that the acid in the milk will start to fade the bright green color of the beans within a day and cause some textural changes.
It's your call when you will find that the charm of the freshly made dish is no longer there and the dish is not worth sharing with others.
