Defrosted this should be serviceable as a brown bag lunch item.
I'm not sure if it would retain enough of its fresh charm to serve to company. I would definitely try it out myself before deciding whether to serve it defrosted to guests.
That's really the same course of action I would take on so many things people have asked about freezing over the years here. Try yourself and decide on your own whether or not it's something you'd put on your dinner table to represent your kitchen.
Everyone has their own standards on what's acceptable to eat themselves and what's good enough to serve to guests. There are certainly leftovers I eat at home that I would not offer to my mom for example.
Neither potatoes nor beets are in this particular recipe so I wouldn't worry. In my long experience I have found that both cooked fish and cooked rice are edible after a stay in the freezer.
If I were planning on making a big batch of this, I'd probably leave out the spinach and cilantro. The latter would blacken after defrosting. I'd just add fresh greens after reheating and just before serving.
Of course, if I were just stocking some for a future brown bag lunch, I'd probably be lazy and just include the greens.
There's the aesthetic aspect too. If you don't want to serve blackened, wilted cilantro to others, don't include it in the portion to be frozen.
Again you are best off trying it and deciding for yourself. After all, the primary goal of a cook is to please his/her taste buds and those joining at the dinner table.
