I need help with the meringue. It is not crisping up!
Hi! The meringue is in the oven and doesn’t seem to be crisping up. The center also seems soft. Any clues as to why? Also, what can I do!?! Thank you!

If you want a crispy crust, you would have to bake in a low oven, probably ~300F, for about an hour and then leave it for another hour with the oven off & door open to dry it out further. Essentially, you are making a pavlova.
