Yes, if there is room for it in the oven. I do apple crisp and apple pie on a closed grill in hot weather, and that is the temp I ordinarily go for because I am generally doing a pork butt roast at the same time. How long it takes to bake depends on the size of the baking dish, obviously - but a normal size one in a 9x9 inch pan will go for about two hours. Then if you can, raise the temp to the usual 350 to crisp and brown the topping. But if I am honest, I would roast both at the higher temp of 350F from the start. I've never roasted tomatoes at 275F honestly- just roast meats.
