Looking for successful substitutions for tomato

There are many reasons I do not/can not use tomato. Whether a recipe calls for a small amount of tomato paste or a couple of cups of chopped tomato, what are your favorite work arounds for this most popular nightshade?

I often puree roasted red peppers with carmelized onions. I use chicken or vegetable stock to a thickness for either soup or pasta sauce.

Just a few thoughts - won’t be exactly the same taste or texture.

Think of the purpose the tomato served in a dish or recipe, and replace accordingly.

Examples -
• for color in a salad, some other red vegetable;
• for use as a sauce on pizza or pasta, another sauce that works with your ingredients;
• for acidity, some citrus juice or vinegar.

Another thought for the pizza and pasta dishes. Start with some recipes that already have other-than-tomato sauces (white, green, barbecue) and get a feel for what works together. Then, if you want, start branching off and maybe create your own.
