Could you portion out the dough and freeze uncooked? With water step happening when you defrost to bake I would assume.

I can't see any reason why the portioned dough would not freeze well, since everything in it does. You would have to allow the balls to thaw before you could apply the water and flatten them, of course- but otherwise I expect it would go all the same as if you simply chilled the dough overnight.
