to chop or not to chop the endive?
Why does the recipe call for "chopped endive" when the endive in the picture is clearly not chopped but left as whole leaves? It seems like it would make a big difference.

* The chopped is good for mixing in.
* The more or less whole leaves are good for photographs to signal what the ingredient or main flavor is (the way we sometimes do with a piece of fruit decorating a cake or pie whose flavor you might not know from sight).
