i wonder if a garlic aioli [or one of the hundred other flavors of same] might please you. i make a special [for us] spread that my mom called 'mock hollandaise'[because of the color] and i tweaked and call mustard mayo. it consists of half mayo, half ballpark mustard, lots of tamari [or soy sauce] and a little lemon juice. we put it on baked potatoes, broccolini, asparagus.

Would be helpful to know what you dislike - the texture , the tang, etc? Hard to know what to tell you to replace it with.

Sour cream or creme fraiche. *(I hate mayo too...)

Your choice of possible substitute will depend on what you hate in the mayo and what you want in a salad dressing.

For thickness, some people like a tahini sauce or a slightly thinned hummus.

For avoiding oil, some people use melted butter, lard or schmaltz as the fat, mixed with a compatible acid.

For a soured milk or cheese fkavir, use Ranch or Caesar dressing, yogurt or sour cream.

Typo, ugh!
Should read: for a soured milk or cheese flavor…
