Can I use red wine in shrimp bisque?

If not, what can I replace it with?

I don't recommend red wine in a shrimp bisque. Tannins in the red wine can give the bisque a weird almost metallic taste. If you only have red wine, be sure it does not have strong tannic notes. Otherwise, I would use white wine, sherry or dry vermouth.

Many recipes for this use a half cup total of wine/spirits (half sherry. Half brandy) you could replace that with the red wine. Especially as there is tomato and other strong flavours in the fish.

Cut off too early. Last sentence should be:

Especially as there are strong flavours in the fish stew (tomato and other), the red wine will work with them but not overwhelm them.
