Top and bottom layers separating in socca?

Has anyone experienced the top and bottom layers separating and being more dry/crispy, while the middle stays more moist/chewy? I suspect that it might be a temperature issue, but not sure what adjustments to try.

Mother of Plants - I've made Socca, but not had this problem.
Thinking about it, the middle is not cooking through, so I am guessing the problem is one or a combination of - pan not hot enough, too much batter in the pan so the middle doesn't cook. Maybe also the batter is a little too thick.
Solutions - experiment with hotter pan, thinner batter and/or less batter per pancake.
Maybe others will have more ideas.
