Anyone ever try this with canned whole tomatoes? It’s impossible to find ripe tomatoes in midwinter in Illinois!

It's hard to get good tomatoes in the winter here, too. My go to has been a 28oz can of crushed tomatoes. They won't have the pretty texture of your photo, but the taste is amazing!
The reason I like the crushed tomatoes is that they don't have calcium chloride added in, it's just tomatoes. Whole and diced tomatoes have this additive, and it changes both the taste and texture.

Not canned tomatoes, but I cheat to make tomato soup with tomato sauce. Add some milk or cream, olive oil or butter, optional roux.
Serve with toasted cheese sandwich or some carb added to the soup - pasta, dumpling, potato.
