I didn’t get the crispy edges even with the brownie edge pan

Made this today and everyone said it was delish, but mine did not get crispy. It browned nicely but I didn’t get the crispy outer layer described in the recipe. I used a brownie edge pan, as well.

Did you grease the pan and/or make any changes to the recipe? (e.g. use skim milk instead of whole milk, use less sugar, etc?)

I buttered the pan as instructed and used 2% milk. I noticed ALOT of butter on top after I took it out of the oven and had to soak it up with a paper towel. I baked it for the full hour.

Next time don’t remove the butter; it will help give you the crispy edges once the niangao cools down.

I didn’t remove any butter until it was completely cool and then I only dabbed the excess off the top
