Yes, Swiss chard would be an excellent substitute for spinach, if that’s what you like or what’s on hand.

hmmm. my preference would be the assertive meaty Tuscan kale! and remember the importance of acid. i'd reach for pomegranate molasses or lemon juice, and orange zest! best, mindy

i see now that aj included red wine vinegar, a def. acid! it might be fun and quick to test it and my 3 acids and find your fav.

Yes!! I’d cut the leaves from the center ribs and then chop the ribs, to add with the lentils. Doing this will add a bit of texture to the soup while reducing food waste. ;o)
