Making creme brulee for 2 instead of 8–how do I adjust cooking time?
It’s just two of us, and it’s a pretty straightforward lemon creme brulee

Haven't done this in a while, but my experience says they won't need much less time than the batch of 8 because volume (even for the whole recipe of 8) is relatively small vs most ovens.
Use this article from michelin to help (bake at 205C or 401F for about 45 minutes and start testing. Or start a bit sooner for the smaller set of 2.

If you have counter-top appliances like air fryer or toaster oven you might try making in one of them, for lower energy use and maybe shorter time. Follow guidelines from the appliance and/or texture guideline from the Michelin article.
Wherever you bake them, use an oven broiler or torch to finish the top.
