I think it’s hard to answer without seeing your recipe but personally i think most recipes have too much meat so I would say no problem. I also like lots of beans & veggies in mine so I think you should post your recipe before anyone can post a good answer.
Of course! To keep the seasonings from overpowering the recipe, I would substitute the second pound of ground beef with lentils or beans. If the recipe already has beans, I would add orange lentils, I think they are called masoor dal. They have a nice texture.
To me that would depend upon the recipe you plan to use. There are chili recipes that only use ground beef, tomatoes and seasonings, then there are those that also include beans, corn, and other ingredients. Some chili recipes use only beef cubes and seasonings. If you are using say a bean forward recipe, you may be able to cut back on the ground beef, but you may want to cut back on some of the spicier ingredients in the beginning and taste as you go, you can always add more. Finally, as one who is trying to cut back on eating red meat, I like to make chili with ground turkey.
