Freezing the dough? Is this possible?
Can you freeze the dough in individual dough balls? If so, do I thaw on the counter and then proceed or put it in the fridge overnite?

Generally pizza dough freezes well, and gives better results (texture, taste) if you defrost it in the fridge, then move to room temp to make the pies.
This all should work fine for individual dough balls.
With dough ball size, the final prep will take less time than for a full pie.
