what should I do with a beef shank?
I have a 350g beef shank and no idea what to do with it. Any ideas on how to prepare it? Most recipes use much more beef shank so I don't know if they are down scalable. Thanks in advance.

Hi there!
We love this recipe for Khao Soi Nuea from Austin Bush. Beef shank is the main protein in this Thai curry noodle soup. You could roughly half the recipe to accommodate for your 350g amount vs the 800g required in the recipe:

I would make it Chinese: https://redhousespice.com/braised-beef-shank/#recipe
This is for 1500g but I think you can reduce the recipe by 1/3. I would
It's one of my favorite cold beef dishes. If I'm lucky, it's part of the starter course at a wedding banquet ;)

Braise (good recipe at bigmansworld.com). Recipe can be downscaled to the amount of meat you have.’
And/or various recipes like osso buco, but using beef.
