Hello - can you substitute buttermilk for the milk in this recipe?

You certainly can. Simply add 1/2 teaspoon of baking soda for every 8 ounces of buttermilk. Don't change anything else. The same applies if you "make" buttermilk by adding vinegar to milk.

There are actually several substitution options for buttermilk– including a mix of cow’s milk and an acid like vinegar or lemon juice. You want the proportions to be about 1 tbsp of acid for every cup of milk, stir, and let it sit for 10-15 mins before using. Short answer is yes, you can replace milk with buttermilk in a baking recipe.
But it's not a 1:1 simple switch. My substitutions bible advises reducing baking powder and adding baking soda when making this replacement. Rather than making the calculations (and maybe a mistake), I would go for a waffles recipe that already has buttermilk and corn flour built in.
It is easier to replace regular flour with gf flour, 1:1, than to do the buttermilk conversion.
