I think i overcooked raw pistachios for pist. paste. Now they are soft/tender and dont easily shed their skin. Can they still be used or start over?

It looks like you’ve over-blanched your pistachios, I just talked to the test kitchen and we recommend starting over. Sorry!

To reduce food waste, we recommend that you dry out your pistachios in the oven and then crush them to put on top of a salad. I hope this helps!
