Is Soup Aux Pois without ham heresy?

For Soup Aux Pois, has anyone subbed 1) lard and 2) not used a ham hock... We were just at La Buche in Quebec City on a food tour and I think that is what they said!

No, heresy only to its devotees.

There are many great versions of split pea soup. I know of at least four - with hot dogs, with chicken, with smoked turkey, vegetarian.
