There’s a range of weight or volume you can use. Butternut squash in grocery stores ranges roughly one to five lb total.

You’ll lose 2-3 oz in trimming the skin, and the long neck (called for in the recipe) is about 2/3 total… so somewhere between 2/3 and 3 lb.

One cup raw cut weighs about 5 oz or 150g.
So 1 lb or 450 grams gives about 3 cups.
