Can I cook Stuffing in Roaster Oven
Has anyone ever baked stuffing in a Roaster Oven (not one with doors but one with a pan insert)? If so any tips you can recommend.

I suppose the decision is a combination of what's possible/recommended for your appliance, and how big a batch you are making.
If iit's ok for your machine and you are not making enough to fill the pan that comes with it, yes go ahead.

Nancy is totally right here! Roaster oven performance and power can vary on the brand. So the biggest advice I have here is to be patient and check often in the process to ensure the stuffing doesn't overcook.

Haven't done it myself, but I think yes because the Roaster Oven machine includes baking in its functions.
Check with your manual and/or manufacturer for adjustment - if any - to times and how to set temperatures.
Guess you want to do this for Thanksgiving.
HEAT. My recipe for stuffing calls for baking at 375F (190C), so that would be high medium if the machine doesn't have degree settings.
TIMING. I would test the stuffing at about 3/4 the baking time to see how well it's done. If you're cooking straight through to the meal, continue until cooked to taste. If you're cooking in advance, I might stop the cooking at 3/4 time, and finish just before the meal.
