Can these be prepared or frozen ahead?
Is there any point in this recipe where the unbaked buns can be frozen? I love to make croissants and these would be great, but I can't eat them all before they lose their brilliance. It would be great to freeze some and pull a few out at a time.

We spoke to the developer Nea and she says that for absolute best freezing, you'd freeze these post bake but to do so before baking, you should freeze after forming but before the final proof (halfway through step 9).
