How long should I cook a 4lb beef fillet Wellington for medium rare?
I have never cooked such a large fillet before in a Wellington so would appreciate advice. Shall I cook as one whole or would it be better in two halves?

Hopping in here! I addmitedly have only made one or two Wellington's in my life but I do think it might be tough to cook a full 4lb fillet in a Wellington, while guaranteeing that beautiful medium rare look throughout.
I do think, if I were in your shoes, I'd do two separate wellingtons at 425 F for 35 to 45 minutes.
If you were to do the whole 4lb, I do think it might take a bit longer but your probe thermometer is your friend. I know sticking it in my ruin the perfect exterior of the pastry, but I'd rather have some holes in my puff than an over or under cooked piece of beef. Start testing at 35 minutes and remove when the center of the roast is at 120 F, for medium rare.
