Following up on Rufty's answers below. In the early 20th century (especially during the Great Depression) it was pretty rare that families consistently had fresh milk on hand. So for baking, sour milk (buttermilk) and other canned products were actually basically the default.
So! They would specify when calling for whole milk as sweet milk.
