Short Grain brown rice instead?
What adjustments would I have to make in this recipe if I were to use short grain brown rice? ( often a substitute for arborio) in place of Arborio?

The biggest adjustment is going to be cook time. It could take nearly twice as long, which may also require more stock, I would have at least a half a quart more than what the recipe calls for, because the rice may absorb all of the provided stock and still not be finished.
If you don't mind a bit of a stand and stir for 60 minutes + then this should work!
