Substitution for Amish Bermuda Cheese?

I haven’t ever heard of this cheese, but can you suggest a substitution?

Hi Laura!

I've never used this cheese before! I'd probably go to the grocery and see if they have any onion cheeses in order to replicate this closest to the author's intent. If not, I would go for a semi-hard, mild cheese like gouda or Monterey jack.

This is not a traditional dish, pick whatever you think would please the people joining you at your table.

My default fallback cheese for these sort of situations is imported Gruyère (Swiss or French). Great aroma, great flavor, melts well, and easy to find a decent import. If I could only bring five cheeses to a desert island, Gruyère would be one of them.
