Sub Almond Flour for Oat Flour?

Help! I’m in a pickle! Can I sub almond flour for the oat flour in the Pecan-Crusted Oat Flour Genoise recipe?!?

Stephanie,

Haven't done this substitution myself, but am guessing you want to maintain GF but don't have or can't digest oat flour.

However, almond flour absorbs much less water/liquid than oat flour, so I fear it would disturb the balance of moisture in the recipe or require complicated adjustments. Also, more nuts to a recipe which already has nuts? Maybe another disturbance of the flavor or moisture balance.

Instead, have a look at this article which recommends about half dozen replacements for oat flour and see if there's one you like or are willing to use...rice, tapioca, buckwheat, etc.
