Cooking prime rib without leave'in thermometer
I have always used a leave-in thermometer when cooking prime rib. Today I have only an instant-read. How soon should I start checking my roast (2 ribs, just under 5 pounds)?

So I will say, while the below advice is definitely a good ball park, this can vary depending on a bunch of factors.
While it’s not ideal to open the oven to check with a probe, I definitely think you could pop it open and check after the first few hours.

It depends on the temp you’re cooking with but as an example if you were doing 250, I’d check every 15-20 min after the second hour
