How much sugar goes into the pastry cream? I can't see it. Sorry if I missed it.

No, I get the confusion. The recipe lists 1/3 cup of sugar, between the lime zest and champagne. Then it tells you to use 1/2 cup of sugar to make the mango puree. I would probably do 1/3 cup in the pastry cream and give it a quick taste to see if it was sweet enough to suit me. Given that everything else is fairly sweet, it doesn't necessarily need to be overly sweet- just nice and creamy smooth. But again- it's desert, and a few tablespoons of sugar more or less isn't going to be a major faux pas or culinary sin.
