"tangzhong" Look it up & apply to cinnamon rolls. The rolls are super nice & soft & if not eaten in one day :) will stay fresh longer.

I could give suggestions from adapting cinnamon rolls at home, but there are recipes designed for this online (allrecipes.com and many others) with hundreds of likes by home cooks who have used them.
Search for cinnamon buns “soft” or “like Cinnabon”

PS Just throwing in some suggestions from bread baking knowledge:
* wetter dough sometimes gives softer rolls, but there are disputes about this.
* bakeries and restaurants use machines for consistent smooth mixing and rising.
* bakeries and restaurants use dough conditioners (no experience, so can't comment)
* for the oozy cinnamon filling, use lots of butter and sugar.
